About the Author

Allen R. Angel received his AAS in Electrical Technology from New York City Community College. He then received his BS in Physics and his MS in Mathematics from SUNY at New Paltz, and he took additional graduate work at Rutgers University. He is Professor Emeritus at Monroe Community College in Rochester, New York where he served for many years as the chair of the Mathematics Department. He also served as the Assistant Director of the National Science Foundation Summer Institutes at Rutgers University from 1967—73. He served as the President of the New York State Mathematics Association of Two Year Colleges (NYSMATYC) and the Northeast Vice President of the American Mathematics Association of Two Year Colleges (AMATYC). He is the recipient of many awards including a number of NISOD Excellence in Teaching Awards, NYSMATYC's Outstanding Contributions to Mathematics Education Award, and AMATYC's President Award. Allen enjoy tennis, worldwide travel, and visiting with his children and granddaughter.

Dennis Runde received his BS and MS in mathematics from the University of Wisconsin–Platteville and Milwaukee, respectively. He has a PhD in Mathematics Education from the University of South Florida. He has been teaching�for twenty years at State College of Florida, Manatee, and Sarasota Counties and for ten years�at Saint Stephen's Episcopal School. Besides coaching little league baseball,�his other interests include history,�politics, fishing, canoeing, and cooking. He and his wife Kristin stay busy keeping up with their three sons—Alex, Nick, and Max.

How Baking Works

This book is as it is discribed. I thought it would give more explaination of why certain things happen when baking. For example if you use cold ingredients like eggs in baking, your cake may bake with a dome in the middle. I didn't find any explainations such as this, only differences between ingredients such as AP Flour and Cake Flour. But not what would happen if you used one as opposed to the other. I was looking for a book that would help me to understand why certain things happen, like why my cake sometimes rises light and airy as opposed to not rising and being heavy. I guess more the results of the chemisty of baking .

All Nighter!

I wrote a 17 page term paper during culinary school in one night with only this book! This book opened my eyes to the incredible chemistry behind baking. If you want to understand why things react the way they do in this medium, I strongly suggest this book!

The Baking Book I've Been Looking For...

I am a home baker and have been looking for something to teach me how individual ingredients work to create the whole. Sometimes it was a bit overwhelming, I wondered how I was ever able to bake anything successfully, but it all came together and I feel like I learned a lot. I appreciated that it was all about the science of baking and not full of recipes.
I was a little disappointed that I wasn't really able to do many of the experiments, they called for too many different ingredients unavaillable to me or equipment I don't have at home. But overall I found it very helpful.
I wish someone would write something similar for the home baker, dealing with the equipment and ingredients we have access to in the home kitchen, but not dumbed down like the other books I've found.

Great resource but the Kindle version TOC doesn't match the text!

This is a gold standard resource text for neonatologists and pediatric neurologists. However my complaint is that the Kindle version has a hyperlinked table of contents that corresponds poorly with the actual material. I find it very difficult to find the beginning of chapters relative to where the hyperlink sends me (it's often more than a few pages off).
Can someone fix this? (Should be pretty easy...)

A must own for child neurologists

Pros: This is the most comprehensive text available on the neurological development of the fetus and newborn. It's very well organized and a pleasure to read.

Cons: No colour photographs. I have both the Kindle and hardcover copies. I bought the hardcover years ago when it was printed beautifully on glossy paper. However, colleagues who have purchased the book since then have received it on matte paper where the image quality isn't as good as my version.

This is undoubtfully THE source of knowledge for the basics and more for neonatologists who deal with neurology and its problems in NICUs.
The e-book is not perfect-the links not always are related and many times the bok starts over from te beginning, but it's a GREAT source, even though.

A Self-Important Force for Good

Suzuki is an Asian-Canadian geneticist, environmentalist, and television personality. His 1991 "Declaration of Interdependence" has attracted considerable attention in conveying the message that we are all responsible to and dependent upon one another and as well to all life on this planet. It's an important message and one that bears repeating and re-enforcing. His manner, however, in this autobiography, tends toward sentimentality and self-importance. It's a long slog. Like a macrobiotic diet, it's good for you but not much fun.

Spiritual scientist

David Suzuki has hosted some very fine "Nature of Things" tv shows on PBS. I have a dvd copy of one of his shows on "the Mystery of Mind." Suzuki combines the intelligence and dispassion of a good ecologist with an open-mindedness worthy of a philosophical journalist. His stories about his family -- especially his father and his environmentally active daughters -- are very heart-warming. He presents a scientifically valid yet spiritual view of the world in which we live.
